DUTCH RECIPES
ASPARAGUS AU GRATIN
(Bergen-op-Zoom Dish)
One bunch aspar- 2 oz. butter
agus
3 oz. grated
cheese
2 oz. flour
z2 pt. asparagus
water
pt. cream
2 egg yolks
4 hard-boiled eggs
Wash and cook the asparagus. Drain,
retaining the liquid. Make a cream sauce
with the liquid, butter and flour. Add the
egg yolks and part of the cheese.
Arrange asparagus in a buttered baking
dish, then alternate slices of hard boiled eggs
and the sauce, ending with the sauce. Top
with grated cheese and crumbs. Brown in
the oven.
HARINGSLA (Herring Salad)
3 marinated herrings
2 sour apples
3 eggs -4'
a beet (boiled)
3 to 4 spoonfuls of salad oil
2 to 3 spoonfuls of vinegar or
mayonnaise
boiled potatoes, onions, pickles,
pepper
Boil eggs until hard, then cut them into
very small pieces. Cut beet, apples and onions
very finely and mix them together. Add
some lettuce, if desired. Now mix every- pointed distributors
thing together, keeping some of all ingred
ients for final garnish.

Make a French dough as follows: mix
butter, flour, water and salt with a fork
until flour and butter are well mixed. Dough
may still contain small lumps of butter.
Turn dough on a well-floured board. Roll
out, fold and place in refrigerator for 1 5 direct contact with wood or it take
minutes. Repeat this process 3 times. Then
roll out very thin. Cut out rounds with a

(Pancakes with bacon)
1 8 oz. flour
1 quart of milk
1 oz. yeast
6 oz. bacon (or pork)
Add some lukewarm milk gradually to
the flour and beat till smooth. Dissolve
yeast in remaining milk and add to mix
ture. Let rise for one hour. Cut bacon into
small pieces and fry until light brown. Do
3 or 4 pieces at a time, pouring batter on
top of this, making one large thick pan
cake. Cook to a light brown on both sides.
Repeat for each pancake. Serve with molasses.
