V2 teaspoon pepper, 1 tablespoon finely chopped onion, 2 tablespoons olive oil, V2 cup finely diced celery. Cook potatoes in rapidly boiling salted water until marinade of remaining ingredi ents. Turn over warm potatoes and let stand until thoroughly cooked. Heap in lettuce cups. Dressing: 1 cup milk, 1 tablespoon butter, 3 tablepsoons corn starch, 3 tablespoons cold water, 2 teaspoons dry mustard, 1 teaspoon salt, dash cayenne, V2 cup of Heineken's beer. Heat milk with butter. Mix corn starch to a paste with cold water. Add milk with seasonings. Cook over hot water, stirring constantly until thick. Cool. Add Heineken's beer slowly, beating until smooth. Force through a sieve if necessary. Serve on potato salad. Approximately 6 portions. CHEESE AND BEER SAUCE ON ASPARAGUS V2 pound processed American cheese, diecd, V2 teaspoon dry mustard, V2 teaspoon cayenne, V» cup cold Heineken's beer. 24 stalks of cooked asparagus, 6 slices toast. Combine cheese, seasonings and Heineken's beer. Place over hot water, cook slowly, stir ring constantly, until smooth. Arrange Aspar agus on toast. Serve with the sauce. SWEET POTATOES 6 medium-sized potatoes, 2 tablespoons butter, 1 teaspoon salt, 1 cup Heineken's beer. Cook sweet potatoes in rapidly boiling salt ed water 30 minutes or until tender. Peel and slice lA inch thick. Place in cassarole. Dot with butter. Sprinkle with V2 teaspoon salt. Add Heineken's beer. Cook in hot oven (400 de grees F.) 1 hour or until Heineken's beer is almost absorbd. Sprinkle with remaining salt. Serve hot with plenty of melted butter.
